White Bean Relish Recipe – Pickled Beans Recipe

Pickled beans recipe ingredients:
- 1 1/2 kilogram white kidney beans
- 1 1/2 kilogram sweet peppers (green, red, yellow), diced
- 1 kilogram tomatoes, sliced
- 1 big onion, chopped
- 1 garlic bulb, minced
- 200 ml vinegar
- 250 ml oil
- 150 grams sugar
- 50 grams salt
- 1 tablespoon parsley leaves, chopped
White bean relish recipe instruction:
Cook and drain white kidney beans.
Chop the onion, fry it in little oil, add diced peppers and keep fry them for few minutes to soften. Add tomatoes in it as well and fry them for few minutes more.
Add cooked and drained beans in vegetables and fry them all together for 20 minutes.
In the end, add garlic, sugar, salt, vinegar, rest of the oil and parsley leaves in the vegetable mix and cook it for 10 minutes more.
Pour hot bean relish in warm clean jars. Adjust caps over jars and process for 20 minutes in boiling water bath.
Relish Pickle Recipe – Red Tomato Chutney Recipe

Red tomato chutney recipe ingredients:
- 400 grams red tomatoes
- 100 grams onions, chopped
- 1/2 teaspoon ginger root, grated
- 400 grams sugar
- 1 tablespoon lemon juice
- 2 tablespoons vinegar
- 1/2 teaspoon pepper seeds
- 1 teaspoon paprika
- 1 tablespoon salt (or according to your taste)
- 1/2 teaspoon lemon zest
Relish pickle recipe instruction:
Peel tomatoes (cook them in boiling water for few minutes, take them out and peel the skin from them), cut them in pieces and mash them.
Mix all ingredients together in deep pot and cook them to boil (stir them constantly).
Continue to cook chutney in low heat till it thickens and you get desired density.
Pour hot tomato chutney in warm and clean jars, adjust caps and process for 15 minutes in boiling water bath.

Green Tomato Pickle Recipe – Onion Pickle Recipe

Green tomato pickle recipe ingredients:
- 400 ml vinegar
- 300 ml water
- 1 tablespoon salt (or according to your taste)
- 1 kilogram green tomatoes
- 500 grams small onions
- 1 teaspoon green pepper seed
- 1 teaspoon mustard seed
Tomato onion pickle recipe instruction:
Cook vinegar, water and salt to boil. Cool it.
Wash and clean green tomatoes and small onions. Slice tomatoes and if onions are too big, half them.
Arrange it in layers: first layer of tomatoes, sprinkle it with some pepper and mustard seeds, then layer of onions, sprinkle it with some pepper and mustard seeds and repeat till you get your jar full.
Pour cooled vinegar mix over vegetables and seal the pickle jars.
